My name is Charlotte aka Charlie (duh) and this is my second blog. My first blog was Happy and Veg, and my last post there is an explanation of why I switched to come here.
At first I didn’t really know what to do as a first post, should I present myself (but I have my “about” page), should I explain why I started a fresh new blog (did that on Happy and Veg), etc. So I decided to immediately post something useful, so here is a recipe my mom invented for her birthday!

A lot of people already know sweet potato brownies, but have you ever heard of sweet potato blondies? So blondies are basically brownies without cacao and with vanilla. They taste like sweet caramel, literally heaven. My mom was being creative so she customized our usual sweet potato-brownies into one of her best birthday cakes ever ❤
And I’m gonna give you the recipe! It’s vegan, oil-free and without refined sugar, but most importantly it’s very berrie delicious 🙂
what you’ll need
- 3 large sweet potatoes
- 2/3 cup almond flour
- 1/2 cup buckwheat flour
- 200 gr date syrup (any sweetener will do the thing)
- 2 tbsp vanilla extract
how you’ll make it
- preheat the oven to 180° Celsius (or 356° Fahrenheit)
- steam the sweet potatoes
- mix all the ingredients with a blender
- bake for 20 minutes
Let the sweetness melt on your tongue like glitter fairy sugar and enjoyyy xxx
